Debina has been cultivated in Zitsa since 600 AD and is the main indigenous variety from which the well-known sparkling and semi-sparkling wine of Zitsa is produced. Zitsa was the first to introduce the cultivation of Debina in Greece and created a more or less carbonated wine that resulted from the vinification of white Debina and red Bekiari and Vlachiko. The combination of the local climatic conditions, with the variety of the soils of the area, the cultivated vine varieties, the applied cultivation care of the vine and the winemaking techniques, contribute to the quality characteristics of the PDO wines Zitsa.
In 1954, a first attempt is made to regenerate the vineyard of Epirus, with the establishment of the Zitsa Wine Cooperative, while the first organized winery in the area is established in 1973 on the initiative of the Union of Agricultural Cooperatives of Ioannina. A year earlier, the Viticulture Zone of Zitsa was established as a Designation of Origin of Superior Quality. The white wine PDO Zitsa is produced by the method of white vinification. The processing of the grapes takes place in wineries which have suitable facilities for the application of modern technology for the production of white wines.
