Xinomavro is cultivated in the cold climate of Macedonia. This variety is versatile, quite sensitive to drought and disease, with several whims in cultivation. It is one of the four ambassadors of Greek wine varieties (the other three are: Assyrtiko, Agiorgitiko and Moschofilero). There are four wine production zones with Protected Designation of Origin (PDO) of the Xinomavro variety: Naoussa, Amynteo, Goumenissa and Rapsani. In the two areas, Amynteo and Naoussa, we find PDO as a single variety wine. In Goumenissa another red variety Negosca is added up to 30% and in Rapsani it coexists with the variety Krasato and Stavroto. The xinomavro depending on the microclimate of the area gives different aromas.
